Back in 2009, when Aaron Franklin and his wife, Stacey, opened a barbecue trailer on the side of an interstate in Austin Texas they both had no idea what they have gotten themselves into. Fast forward to 2015, a lot of people can have considered Franklin Barbecue one of the best barbecue restaurants in the Austin area and even some consider Franklin BBQ one of the best barbecue joints in America.


During a trip to Austin, I had a chance to not only meet Aaron but also get a behind the scenes look into his barbecue empire on the corner and just from spending some brief time with Aaron anyone can see his passion for creating some amazing barbecue day in and day out. Along with his amazing passion you can see that he is just an overall great guy. I have kept in touch with him over the years and when I first heard that Aaron Franklin was writing a book I was completely surprised and my second thought to myself was that I need to have this book for my bookshelf and that this book is going to be a serious must have for anyone who loves central Texas barbecue or just barbecue in general.

Review and Rating of Franklin Barbecue: A Meat Smoking Manifesto

I have reviewed a lot of great and not so great barbecue and grilling cookbooks. I have also realized what books are must haves and what books aren’t. And I can tell you that this book is a MUST HAVE. Before I get into my reasoning I want to give you an overview of the book. Aaron Franklin’s first barbecue book is not your traditional barbecue recipe cookbook like one would expect. The book goes into major depth of barbecue from chapters dedicated to building or even customizing your own smoker, finding and also curing your own wood to use to smoke, how to create and tending perfect fires, finding top quality meat and lastly creating and smoking mind blowing barbecue which has made Aaron legendary in the barbecue world.

What I like most about this book is that Aaron doesn’t just focus on recipes and more recipes he gives you a 360 degree perspective of the amazing world of central Texas barbecue and Aaron gives you a step by step guide to the basics of creating great barbecue. So many times we are left wondering how to find that perfect cut of meat or even how to create that perfect fire that will create the best barbecue possible. I loved the full chapter titled: “Fire and Smoke” which was just dedicated to as Aaron puts it “the crucial factor that determines the success and failure of your endeavor…”: FIRE and how to correctly maintain it. So many times we forget that barbecue isn’t just finding and creating the best recipe there are so many important aspects to creating great barbecue and Aaron’s book reminds us of that very important factor.

My favorite chapter of the book was the whole chapter dedicated to customizing and or building your own smoker. I think that Aaron’s story can be defined by his passion for building the smokers that he uses at his Restaurant. When I visited him in Austin, I had a chance to talk with Aaron and get a tour of his smokers, and to see him talk about it really brought a huge smile to his face and it came through when I read the chapter of the book about “the Smoker.” The very fact that the second chapter of the book was about his smokers and barbecue smokers in general really shows his passion for creating and customizing his cooking equipment. I think that “Franklin Barbecue: A Meat Smoking Manifesto” is the only barbecue book that I have gotten that goes into great depth into how to customize and build your own smoker from the beginnings. After reading this chapter it got me extremely interested in trying to build my own smoker and I know that if I do I am going to be contacting Aaron directly for some tips and feedback because he surely knows what his is doing.

Franklin Barbecue: A Meat Smoking Manifesto is a work of art just like Aaron’s barbecue. Not only has Aaron become a barbecue genius and he successfully transformed the world of barbecue but with the Franklin Barbecue: A Meat Smoking Manifesto, Aaron Franklin is well on his way to become legendary in the barbecue and cooking world. Franklin Barbecue: A Meat Smoking Manifesto should be on every serious barbecue or outdoor cookers bookshelf, the book should become required reading in every school of Barbecue around the world. Aaron has created another masterpiece and I can’t wait to see what is next.
