Directions

1Combine the paprika, coriander, salt, sugar, picked thyme, chili flakes, and half of the zest, mix well and coat the ribs.

2Wrap or cryo-vac and refrigerate at least 24 hours.

3Preheat convection oven to 425.

4To prepare the mop, heat the chicken stock and add the honey, the rest of the zest, vinegar, and thyme.

5Place the ribs on a sheet tray with a rack and place in the oven.

6Brush the ribs with the mop mixture every five minutes for twenty minutes.

2 oranges Orange Zest

2 tablespoons Honey

2 cups Chicken stock

½ cup Apple vinegar
