Oklahoma Joe’s White Chicken Chili

1Make cornstarch slurry using the cold water, set aside

2Make chicken stock using the cold water, set aside

3Pour beans into colander, let drain well

4Melt butter, add celery, onions and jalapenos. Sauté until translucent

5Add flour and stir for 5-10 minutes

6Add half and half, whisk well until thick and smooth

7Whisk in chicken stock and bring to a simmer

8 Whisk in cornstarch slurry, continue to simmer until completely thickened

9Add chicken, chiles and beans. Stir well

10Turn off heat and divide into shallow pans for cooling

11Add 1/4 cup cilantro to every 2 quarts of chili at time of service

1/4 cups chicken base (paste msg free)

3 1/3 cups hot water

7/8 cups diced yellow onion

7/8 cups diced celery

3/4 cups butter blend

7/8 cups flour

1 quarts half and half

1 1/3 TBS cold water

1 1/3 TBS corn starch

1 whole diced jalapenos

1/3 TBS salt

1 1/3 TBS cumin

1/3 TBS white pepper

2/3 TBS granulated onion

2/3 TBS granulated garlic

2 15.8 oz. cans great northern beans - drained

1 16 oz. can mild green chiles

1.7 LBS pulled chicken(cooked/smoked)

chopped cilantro (garnish)
