If you have ever heard of the name Chris Lilly then you know how passionate he is about grilling and barbecue. But if you also thought that you knew Chris Lilly, be prepared to look at him a completely new way because Fire and Smoke: A Pitmaster’s Secrets is going to 100% change how you look at him.

For those who are not familiar with Chris Lilly, Chris is the pitmaster of the World Championship Memphis in May BBQ Competition team Big Bob Gibson, a spokesman for Kingsford Charcoal and also the co-owner of Big Bob Gibson BBQ in Dectaur, AL.

In addition to all his barbecue competition awards, Chris has traveled the world spreading the gospel of barbecue and grilling. He is a true ambassador to the outdoor cooking world.  Lastly, Chris is also the author of the other great barbecue cookbook such as Big Bob Gibson’s BBQ Book: Recipes and Secrets from a Legendary Barbecue Joint

Chris starts Fire and Smoke with a chapter on 18 different types of cookers ranging from cookers with a hefty price tag to cookers that you can make and or pick up at your local hardware store.  The goal of that chapter is that by the end Chris wants you to be able to easily be able to determine which kind of cooker best fits your cooking style and which cooker is the best one to purchase.  After reading the chapter and also looking at it, I must say that I even learned about some new barbecue cookers that I didn’t even know were out on the market.

An example is a Water Belly Cooker. Chris describes the Water Belly Smoker as “a vertical two-chambered barbecue cooker. In between the two chambers there is a pan filled with liquid which servers two purposes. The first purpose it separates the firebox from the cooking chamber…. Second, it creates an extremely high humidity during the cooking process, helping to ensure moist and juicy food…”

Mixed in with all this great advice, Chris also provides ample amounts of Pitmaster tips, that will kick up your outdoor cooking to a whole new level.

If I had to even choose a favorite part of Fire and Smoke, I would have to focus on the amount of and also the uniqueness of recipes. My favorite recipes focus on the grilled cocktails.  Not only is this chapter completely different from normal barbecue and grilling cookbooks the depth and uniqueness that made my head spin 360 degrees. For example, the recipe for grilled hot chocolate is something that you would never think that you can make on a grill but pitmaster Chris Lilly takes you step by step on how to make it and taste ever so good.  Another unique recipe that Chris features is grilled pickled peaches and also grilled pickles, it left me thinking: only an amazing pitmaster like Chris would be able to not only execute this type of recipe but also just come up with the idea for it.

Besides all the amazing advice and recipes, Fire and Smoke also has some amazing and high quality photos. As someone who takes a lot of different food photos, this cookbook takes food photography and especially barbecue photography to a whole new level.

You don’t have to know Chris personally, but to say that he is a class act gives no justice. I have had the opportunity to meet and also cook right besides him on a couple of occasions, and every time that we do meet it is better than the last time. Fire and Smoke sets the standard and the bar extremely high for future barbecue and grilling cookbooks. Filled with amazing photos, a chapter focused just on rubs and sauces and unique recipes from appetizers, main courses, side dishes and desserts and lastly a whole chapter on the “barbecue and grilling life!” In addition, Fire and Smoke “will teach you how to get the most out of your outdoor cooking equipment and master the art of cooking with flames.”  This is a MUST have for any serious amateur to professional barbecuer who really wants to make the leap of grilling and barbecue from a hobby and beyond.
